You can swap the veggies for whatever you like, and you can swap the kielbasa with ham or sausage. I added some flour to the eggs, it gives the egg a perfect quiche texture, without the cream, but if you prefer low-carb, you can leave it out and add another egg.

If you make these ahead, wrap them in pairs or containers in plastic wrap, so that you can grab and go. These will last 4 to 5 days in refrigeration, or may be frozen. Microwave it for about 1 minute to reheat.

This quiche recipe is very easy. It is perfect breakfast for a meal prep and gluten-free. These quiches are SO good, loaded with kielbasa turkey, veggies and cheese.
Instructions
  1. Preheat oven to 350 degrees F. Spray olive oil spray into a non-stick muffin pan.
  2. Heat up the oil over medium heat in a large non-stick skillet.
  3. Stir in onions and salt for 5 minutes, add bell peppers, garlic, tomato and kielbasa for another 5 to 7 minutes, until soft. Add the spinach and cook for about 1 minute, until wilted. Put away.
  4. Whisk the eggs, egg whites, milk, flour, salt, and pepper in a large bowl, until smooth.
  5. Add the cooked kielbasa and cheese mixture to the bowl and mix well.
  6. Pour into the muffin pan prepared and bake for 28 to 30 minutes, or until firm.
