Hummus is a garbanzo dip that has Middle Eastern roots. There are few and simple hummus ingredients, including garbanzo beans and tahini, seasoned with olive oil, lemon and garlic. In hummus recipe blend the chickpeas with the other ingredients until smooth, perfect to dip.

If you want a smoother hummus, you can have your chickpeas peeled. If we have guests, I do this sometimes but most of the time I don’t find it makes enough of a difference to bother as it can take time.

Instructions
  1. Add all ingredients except reserved juices, to a blender or food processor.
  2. Pulse several times to start blending. Add a little bit of reserved juice at a time until desired consistency is reached.
  3. Transfer to a serving bowl and sprinkle with olive oil and garnish with parsley and paprika or cumin sprinkles.
