Buffalo Chicken Salad Recipe

Buffalo chicken salad recipe is easy recipe of salad. It is homemade and delicious. Buffalo Chicken Salad is flavorful and spicy twist on a classic chicken salad.

Buffalo Chicken Salad Recipe

Ingredients:

For the Chicken

  • 1 tbsp extra-virgin olive oil
  • 1 cup buffalo sauce
  • 2 tbsp honey
  • Juice of 1 lime 
  • 1 tsp garlic powder
  • 1/2 tsp onion powder 
  • Kosher
  • Freshly ground black pepper
  • 1 1/2 lb boneless skinless chicken breasts

For the Dressing

  • 2 tbsp freshly chopped dill
  • 1/2 cup mayonnaise
  • 1/2 cup buttermilk
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup freshly chopped parsley
  • 2 tbsp freshly chopped chives
  • 1 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp onion powder
  • Pinch of cayenne pepper

For the Salad

  • 2 cup baby spinach
  • 1 carrot, cut into matchsticks
  • 2 stalks celery, sliced
  • 1 avocado, sliced
  • 4 cup chopped romaine
  • 1 Persian cucumber, cut into half moons
  • 1/2 red onion, thinly sliced 
  • 1 cup halved cherry tomatoes
  • 3/4 cup blue cheese crumbles

Directions

  1. Combine buffalo sauce, sugar, lime juice, garlic powder, and onion powder in a large bowl. Salt and pepper to season. 1⁄3 Cup marinade reserve. Add chicken to marinade remaining and toss to coat. Let marinate at room temperature for 30 minutes. And cover and relax for up to 2 hours.
  2. Heat oil in a large saucepan over medium heat. Remove the chicken from the marinade, let the marinade drip off as much as possible and return to the skillet. Cook for 6 minutes until golden, then flip chicken and brush with reserved marinade. Continue to cook until pink, 6 to 8 more minutes. Place on a cutting board and let stand for 5 minutes, slice into strips.
  3. While, make dressing: Whisk the mayonnaise, sour cream and buttermilk together in a medium bowl. Add remaining ingredients and stir till mixture. Chill until ready to use.
  4. Assemble salad: toss romaine, spinach, celery, carrots, cucumber, avocado, red onion, tomatoes and crumbles of blue cheese together in a large bowl. Just before serving, top with chicken and drizzle with dressing.
