- 2 lb russet potatoes, rinsed and scrubbed clean
- 6 slices bacon, chopped into 1 pieces
- 3 garlic cloves
- 2 cup heavy cream
- 1 cup chicken broth
- 2 cup shredded cheddar
- 3 tbsp all-purpose flour
- 1/4 cup finely chopped chives
- 3 tbsp butter
- Salt to taste
- Freshly ground black pepper
Oven preheat to 400 °. Cook bacon until crispy, about 8 minutes, in a large skillet over medium heat. Drain on towels made of paper.
Melt butter in another large skillet over medium heat. Add garlic and cook for about 1 minute until it is fragrant. Add the flour and cook for a second minute. Season with salt and pepper in milk and chicken broth.
Simmer until slightly thickened, about 5 minutes. Take off the heat.
Peel potatoes and cut each potato in thin coins cross-section.
In a large casserole dish, spoon a thin layer of sauce in the middle. Replace the top with a single layer of potatoes. Top with cheese and bacon, spoon more sauce over the potatoes and repeat three or four times, or until most of the casserole is finished.
Bake for about 1 hour and 15 minutes until the sauce is bubbly and the potatoes are very tender. Before serving, let rest for at least 15 minutes.
